At Anohka, great whisky begins long before it ever touches a still. It starts with how we unlock the flavour from our grain. In this episode, Gurpreet takes you inside one of the most unique pieces of equipment in the whisky world: our Meura Mash Filter. We are the first and only distillery in Canada using this system, allowing us to push flavour extraction and efficiency further than traditional mash and lauter systems. After milling our grain with a hammer mill, we create an ultra fine grist that converts starch to sugar quickly and pulls deeper flavour from the grain. The mash is then pumped into the Meura Mash Filter, where a specialized membrane and air bladder press the grain to extract nearly every drop of liquid. The result is an exceptionally high gravity wort, an intense concentration of flavour, and up to 30% less water and energy use compared to conventional systems. It is an unconventional approach, but that is exactly the point. At Anohka we combine old world distilling philosophy with cutting edge technology to create spirits that colour outside the lines. This is what happens behind the scenes before fermentation, before distillation, and long before whisky reaches your glass.
