Ingredients: Sauce: 3 Tbsp. soy sauce 3 Tbsp. hoisin sauce 1 Tbsp. sesame oil 1 Tbsp. rice wine vinegar 1 Tbsp. honey 2 tsp. sweet chili sauce 1/2 tsp. garlic powder 1/4 tsp. powdered ginger Lettuce wraps: 1 rotisserie chicken 1 Tbsp. avocado oil 1/2 onion, minced 1 cup red pepper, diced 1 8 oz can water chestnuts, drained & minced Half a bag of cauliflower rice Bean sprouts Butter lettuce Garnish: Crush peanuts Wonton strips Directions: Whisk together sauce ingredients until well combined. Shred the rotisserie chicken. Heat avocado oil in a frying pan. Add onion & cook for 5 minutes or until the onion becomes translucent. Add the peppers, water chestnuts, cauliflower, & bean sprouts, cook about 5 minutes or until vegetables are soft. Add sauce & shredded chicken & simmer on low heat until everything is evenly coated & heated through. Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice! Garnish with crushed peanuts & wonton strips.
