Ingredients 500 grams of brinjal (eggplant), chopped 2 teaspoons turmeric powder Salt to taste 2 tablespoons oil 1 cup old mango pickle (Avakaya) Water as needed Instructions Prepare the Brinjal: Wash and chop the brinjal into pieces. Sprinkle turmeric powder and salt over the brinjal and mix well. Soak the brinjal pieces in water for a while. Remove from water and stuff it with old mango pickle Cook the Brinjal: Heat 2 tablespoons of oil in a pan or small cooker. Add the brinjal pieces and sauté for a few minutes.
