Years ago, I developed this absolutely delicious recipe for eggplant parmesan, and recently, I was inspired by a recent trip to Italy, to change my presentation, so now it is the perfect eggplant parmesan. There are a few key steps and ingredients, that make my eggplant parmesan special and soooooooo tasty!! (Eggplant Parmesan) Ingredients • 2 medium sized Eggplant • 1 cup flour • 1 cup fine (not coarse) bread crumbs (the finer, the better) • 2 large eggs • ¼ cup milk • Grapeseed oil or veg. oil for frying • Grated mozzarella cheese (approx. 2 cups+) • Grated Parmesano cheese (approx. 2 TBSP+) • Salt to taste • Bechamel sauce o ½ stick butter (4 TBSP) o 1 ½ TBSP all-purpose white flour o Pinch of nutmeg o 1 ½ cups of milk • Tomato sauce o 1 can (28 oz) (796 ml) whole, peeled tomatoes (preferably San Marzano) o 1 clove of garlic, minced fine o 1 ½ TSP salt o 1 TBSP Extra Virgin Olive Oil (EVOO) o 2 TBSP oregano Process: • Put 1 cup pf bread crumbs and 1 cup of all purpose flour in a bowl, mix together • Put 2 eggs and ¼ cup milk in a separate bowl, mix together, forming an egg-wash • Place eggplant on its side, and slice horizontally (not lengthwise) into thin 1/16” round “steaks” • Dip eggplant slices into egg-wash, drip off excess, then place in Breadcrumb/flour bowl and coat both sides, shake off excess, set aside. Continue this until all eggplant slices are done. • Add grapeseed (or veg. oil) to a frying pan, about 1/8 – ¼ inch deep and heat to about 350/360 degrees F. • Place eggplant slices into hot oil a few slices at a time (do not crowd nor do not overlap) and cook on medium/high heat for 30 – 60 seconds per side (just till slightly golden) • Remove from pan and add salt to taste (suggest adding very little, just a light sprinkle) • Continue to fry till all slices are done, then set aside • Make tomato sauce: puree the tomatoes, add the garlic, salt, EVOO and oregano, mix together. It’s done. • Make the Bechamel sauce: melt the butter, add the flour, mix together, cook 2 mins, add the nutmeg, mix together. Remove from heat, add the milk and stir in, mix together. Put back on heat, bring to a light boil and continue the boil for 3 minutes, stirring constantly. It’s done. • In an oven ready container (such as a casserole dish or Dutch oven etc) cover the bottom with some tomato sauce. • Now begin to layer your eggplant into individual stacks, by placing a slice on eggplant in the container, then add a layer of Bechamel sauce, then sprinkle grated mozzarella, then add a layer of tomato sauce. Repeat this process till you reach the top of your container • Each individual stack, could be roughly about 6 – 8 eggplant slice/layers high • On the last layer, after you added the eggplant, top with Bechamel, tomato sauce, sprinkle grated parmesano, then end with grated mozzarella cheese on top • Preheat oven to 400 degrees F. • Bake for 20 minutes, uncovered. • Remove and enjoy 😊 Delicious!!
