Sugar Cookies That Are Yummy, Vegan and Homemade

Learn how to make these festive Christmas/ holiday cookies with a simple cookie recipe and easy cookie decorating techniques. Top them off with your favorite decorative sugar or icing for the perfect cookie dessert. Ingredients: ⅔ C shortening 1 ⅓ C of melted butter ( or smart balance) 1 ½ C organic cane sugar ½ C silken tofu packed ( replace 2 eggs) 2t vanilla extract 3 ½ C all purpose flour 2t baking powder 1t salt ⅓ C granulated sugar for decoration Directions: Preheat oven at 350 degrees F (175 degrees C). In a large bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Use cookie scooper to place them on parchment paper. You can decorate with red and green granulated sugar. I usually do half green and half red. If you want to freeze them for later, check out my chocolate chip video that details how to do that. If you’re baking them now, make sure they are two inches apart on the sheet. Bake cookies for 11-12 minutes in a preheated oven, until the bottom is light brown. Add one minute more if you freeze the cookies. Bonus tip: If you are getting ready for the holiday season, start getting your cookie tins and bags from Michaels early. If you wait too late, they will all be gone.
