Hi friends, welcome back to another cozy week with me! This week is all about good food, little moments with family, trying out new recipes, and slowing down to enjoy the simple things. From my 10-minute beef udon noodle soup, to homemade Singapore curry, matcha lattes, tangy yuzu edamame Salad, and of course my beloved Taiwanese beef noodle soup, I can’t wait to bring you along for all of it! We also spent time in my mom’s garden, painted pottery together, went for a few runs, and hosted our monthly book club with the girls. Shirley’s Home-Made Curry Chicken 🥘 Ingredients • 1 kg chicken or chicken mid joints • 1 kg potatoes • 400 ml coconut cream (get 2 pkts of 200ml coconut cream from supermarket) • 1 pkt A1 curry paste (meat) • 6 to 8 pcs garlic • 6 to 8 pcs small onions (shallots) • 1 pc thumb-sized ginger • SPICES TO ADD FLAVOUR IN YOUR CURRY - 1 cinnamon stick, 2 star anise, 4 pcs cloves & some cardamom Steps: 1. Grind and pound the above & put in a bowl 2. Heat up the pan or pot with oil and fry the minced ginger, shallots & garlic on low heat. Add in the spices & fry till fragrant 3. Add in the packet of curry paste & continue to stir it 4. Add in the peeled cut potatoes & chicken. Continue to cook till the curry paste coats the potatoes & chicken, and the mixture is fragrant. 5. Add in the coconut cream & water (200 ml water) or slightly more water if you do not want the curry to be too thick 6. Let all the ingredients simmer on low heat for another 20 minutes. 7. Turned off the fire & covered it up for another half an hr before serving.
