Bread ingredients: 1 egg 1/2 cup brown sugar, packed 1/4 cup liquid state coconut oil (or vegetable oil) 1/4 cup sour cream (or plain yogurt) 2 tsp vanilla extract 1 cup mashed banana (about 2 large bananas) 1 cup flour 1/2 tsp baking soda 1/2 tsp baking powder pinch of salt Cream cheese layer ingredients: 1 large egg 4 oz cream cheese softened 1/4 cup white sugar 3 tbsp flour In a large bowl blend the egg, brown sugar, coconut oil, sour cream and vanilla and blend until smooth. Add the mashed bananas and stir in. Stir in the salt, baking powder and baking soda. Add the flour and stir until just combined, don't overmix. Set aside. Prepare cream cheese layer by creaming together the 4 oz of cream cheese and 1/4 cup of sugar. Add the egg and stir and then add the flour. Stir until smooth. Set aside. Grease a 5x9" loaf pan and pour in about 2/3 of the banana bread mixture. Smooth and press into corners. Pour cream cheese mixture over the bottom layer. Carefully spread it out evenly, covering the bottom layer completely. Spread remaining banana bread batter evenly over the top. Bake at 350F for 45 to 50 minutes or until center is set and a toothpick inserted comes out clean or with just a few moist crumbs. Allow bread to cool in pan for about 15 minutes and then remove from pan and cool completely before slicing. Store at room temperature in a sealed container or in the refrigerator if you think it won't be consumed in a couple of days.
