China is so vast that not only do the flavors differ between the north and south, but even within the same province, there can be significant differences in language, customs, and daily cuisine between different cities. As a Han Chinese from the northwest who grew up with Mongolian, Tibetan, and Hui classmates, my favorite food has always been lamb. If I had to compare the lamb in New Zealand to that in northwest China, I would say they are "equally matched, each with its own merits." In Hamilton, New Zealand, there is a Hunan restaurant with the character "湘" (Xiang) in its name, which you can look up on Google. It was there that I first tasted authentic Hunan cuisine. This is not an advertisement, because on that occasion, they overcooked the tofu and hid the burnt side at the bottom of the bowl. Moreover, their service was super, super average—so much so that I've remembered it since early 2020. This is precisely why I insisted that the character Xiao Jie in the story should experience authentic Hunan cuisine and feel its uniquely distinctive service.
