You can add some water to facilitate some softening of the chickpeas. Mash with back of a spoon. Alternatively you can give the chickpeas a boil in some water and 1 teaspoon baking soda. This helps soften canned chickpeas. Cover and let simmer for about 5-8 minutes while you prepare the vegetables for garnish. Chop up the veggies. Plate the cholay and garnish with the veggies. You can add some chaat masala ( optional ). Enjoy!
