SERABI PANDAN RECIPES For 8 servings Total fiber per serving: 3 g Total calories per serving: 269 kcal Total carbohydrates per serving: 57 g Total fat per serving: 3 g Total protein per serving: 4 g Ingredients (for the batter): 1 1/4 cups all-purpose flour 1/3 cup rice flour 2 tbsp sugar 1/2 tsp salt 1/2 tsp instant yeast 1 tsp baking powder 1 1/8 cups water 1 egg 1 tsp pandan paste Ingredients (for the sauce): 1/3 cup FiberCreme 2/3 cup grated palm sugar 2 tbsp sugar 1/2 tsp salt 1 7/8 cups water 1 pandan leaf 1 tbsp cornstarch, dissolved in 1 tbsp water Instructions: 1. Make the Serabi Batter In a mixing bowl, combine all purpose flour, rice flour, instant yeast, baking powder, salt, and sugar. Mix well. 2. Add Wet Ingredients hisk in the egg, water, and pandan paste. Stir until smooth and lump-free. Cover with plastic wrap and let the batter rest for 30 minutes at room temperature. 3. Cook the Serabi Heat a non-stick pan. Pour about 1 ladle of batter (around 8–10 cm in diameter, or as desired). Cook on low heat until bubbles appear on the surface and the serabi sets with “holes” on top. Remove from the pan. 4. Make the Sauce In a saucepan, combine palm sugar, sugar, salt, water, and pandan leaf. Bring to a boil. Add FiberCreme and cornstarch slurry, stir well, and cook until thickened and smooth.
