Stir fry veggies till tender. Mix cooked veggies & chicken with all other ingredients but half of the shredded cheese. Oil a 9x13 baking pan. Place casserole into pan and top with cheese. Bake for 30 minutes at 350. Oatmeal Protein Pancakes Ingredients: -2 cups old-fashioned rolled oats -2 cups cottage cheese -2 cups egg whites (carton is easier, but can use fresh) -6 teaspoons sugar or alternate sweetener -2 teaspoons vanilla extract -4 teaspoons aluminum-free baking powder -cooking spray Instructions: Put the oats in a blender and blend until they turn into a powder. Turn off the blender and add the cottage cheese, egg whites, sugar, vanilla, and baking powder. Blend well, then allow the mixture to sit for a few minutes to let it thicken up. Lightly coat a nonstick griddle or nonstick fry pan with cooking spray and heat over low/medium heat. Ladle desired-pancakes-size amounts onto the griddle and cook until golden brown, about 3 minutes. Flip and brown the other side, an additional minute or two. Salisbury Steak Ingredients: For The Patties -2½ pounds ground beef -2 large eggs -2 tablespoons flour of choice -¼ teaspoon black pepper -1 teaspoon Mineral Salt -1 teaspoon onion powder -1 teaspoon garlic powder -1 tablespoon Worcestershire sauce -2 tablespoons coconut oil or butter For The Gravy -1 large or 2 small onions, thinly sliced -1½ cups beef broth -1 teaspoon Mineral Salt -8 to 10 ounces button mushrooms, sliced -2 tablespoons flour of choice Instructions: Make the patties. In a large bowl, combine the ground beef, eggs, flour, pepper, salt, onion powder, garlic pow-der, and Worcestershire sauce. Form into 8 to 10 balls and then flatten into patties. Heat half the oil in a large skillet over medium heat. Fry half the patties until nicely browned, about 4 minutes per side.Remove to a plate and keep warm. Add the remaining oil to the skillet and fry the other patties. Set aside with the rest of the patties. Make the gravy. Add the sliced onions to the skillet with a splash of beef broth and the salt. Cook for 8 to 10 minutes, stirring to loosen any bits of meat and drippings from the pan. Add the mushrooms and sauté a few minutes more. Sprinkle the flour over the mixture in the skillet and toss to blend well. Gradually mix in the remaining beefbroth. Turn the heat to low, return the patties to the skillet, cover, and simmer for another 15 minutes without stirring too much, as you don't want to break up the patties.
