Stir in water and until a shaggy dough forms. Cover and let sit 8 to 24 hours. Preheat oven to 450 with Dutch oven inside. Meanwhile, punch down dough (should have doubled in size by now!) Turn out on to lightly floured surface. Fold over to form dough ball. Cover with tea towel for 20 minutes. When oven is preheated, place dough inside on parchment paper.
