Soba Noodles stir fry & Lentil Stew. https://www.smartuniversity.org Insta: SMARTUEastHarlem Facebook: /smartuniversity Youtube: SMART Tutorials NYC Lentil, Potato & Swiss Chard Soup Ingredients 2 tbsp olive oil I medium onion, diced 2 carrots, dice 2 cellery stalks, diced 3 cloves garlic, minced 1½ cups dried lentils, rinsed 1 lb small potatoes, scrubbed and chopped (skins on) 6–7 cups chicken broth or vegetable broth 1 bay leaf 1/2 tsp of turmeric 1 bunch Swiss chard, stems chopped, leaves sliced Salt, to taste pepper, to taste Directions Heat olive oil in a large pot over medium heat add onion, carrots, and celery. Sauté 5–7 minutes until softened .Stir in garlic and cook for 30 seconds add turmeric, salt and Pepper until all ingredients are fragrant . Add lentils, broth, and bay leaf. Bring to a boil. Add potatoes then reduce heat to a gentle simmer, cover, and cook for 25–30 minutes, until lentils and potatoes are tender. Stir in Swiss chard stems after a couple of minutes add leaves and cook for an additional 2–3 minutes until the leaves are a little wilted. Remove bay leaves. adjust salt and pepper to taste Snack of the week: Berry and greek Yogurt Fruit of the week: Pear Airfryer veggie of the week: Brussels with Balsamic glaze
