Tucked into the olive-covered hills of Bayır, a small village in southwestern Turkey, stands a silent but powerful witness to generations of labor, love, and land: the Eski Yaghane, or Old Oil Mill. Long before industrial machines took over, olive oil was crafted through a process as ancient as civilization itself. In this stone-built mill, dating back well over a century—perhaps more—the method was as raw as it was honest: hand-harvested olives, ground by massive stone wheels, and pressed beneath wooden beams and heavy weights, all powered by donkeys or mules, and later by simple motors. The Eski Yaghane wasn’t just a place to make oil. It was the village’s center of life in winter—where families gathered, stories were exchanged, and olive oil, the liquid gold of the Aegean, flowed as both food and income.
