Mutton Rezala is one of the recipes from Mughlai Cuisine.It is very lite yet tasty recipe.The texture of the gravy is very creamy from poppy seeds and cashew paste.Mutton Rezala do not require a ton of spices its main ingredients are whole spices,curd, ghee,poppy seeds paste and cashew paste.This dish is very famous in Kolkata, it goes very nice with laccha paratha. INGREDIENTS 500 gms mutton 2 tablespoons curd 4 tablespoons ginger garlic paste 1 large onion paste 1 tablespoon poppy seeds & 8-10 cashew paste (soak them in water for 15 min then make a paste) 4 green cardamom 4-5 cloves 2 dried red chilli 1 bay leaf 1 teaspoon white pepper corn 1/2 teaspoon mace powder 1/2 teaspoon nutmeg powder 1 teaspoon rose water 2 tablespoons ghee 1 teaspoon black pepper salt to taste 2-3 green chillies (optional) Method -marinate the mutton with 2 tablespoons of ginger garlic paste,2 tablespoons curd,salt & pepper as per taste -keep for for an hour -after an hour in a pressure cook add a tablespoon of ghee and some oil let it heat up a bit then add the whole spices, saute them for 30 secs -now add the marinated mutton saute them for 20 mins -now add 2 cup of water and give it a nice stir, bring them to boil then close the lid and pressure cook it until the meat is soft -after the mutton is fully cooked set them aside and prepare the gravy -in a wok add a tablespoon of ghee and some oil heat up a lil bit then add the onion paste, saute them until golden brown -now add rest of the ginger garlic paste and cook until the raw flavour goes off -now add the nutmeg powder,mace powder and poppy seed cashew paste saute them for 3 mins -add a lil bit of water and cook for 5 minutes -now add 1.5 cup of warm water and keep stirring them -wait for them to simmer -now add the cooked mutton and give it a nice stir -cover the wok and cook for 10 minutes on a low flame -after 10 minutes add some green chillies(optional) and a teaspoon of rose water give a nice stir And the Mutton Rezala is ready to be served ..................
