The Speckled Trout started out as a restaurant slinging fly gear. Today, it’s a fully fledged outfitter and restaurant, both under the Speckled Trout name, sitting side by side as sister businesses serving anglers and outdoors people from all over. Based in the heart of the high country, they offer hiking and fly fishing experiences, along with a bottle shop and tasty local eats to close out a day well spent. To kick off our two-day adventure, we loaded up a military-grade 1987 Hummer and hightailed it into the mountains for a half-day hike, followed by beers back at the shop. On day two, we got up early to drive an hour over to the Watauga River for some trout fishing, just outside Elizabethton, TN. We floated the upper part of the river, caught a handful fish, and indulged in a quick chef-prepared shore lunch that’ll forever set the bar for on-the-water meals.
