I stopped at a classic Spanish roadside truck diner just off the A3 in Cuenca, Spain, expecting a solid, no-nonsense menú del día. The place is called Lavasca, and on paper, everything looked promising. For the first course, I had pisto manchego con huevo duro, which was actually decent — simple, traditional, and exactly what you’d expect from a Castilian roadside stop. Unfortunately, things went downhill with the second course. I ordered BBQ ribs, and they turned out to be a real disappointment. Completely smothered in sauce, lacking flavour balance, and not what you hope for when stopping at a Spanish truck diner known for hearty food.
