Today’s triple chocolate cookies recipe is perfect for the chocolate lovers in your life! The deep chocolate notes from the cocoa powder give these easy chocolate cookies a rich chocolate flavour, and they are loaded with semi sweet and white chocolate chips! The easy cookies have a nice thick tender, soft center. This triple chocolate chip cookie recipe makes 20-24 small (1.5 tbs) cookies, but can easily be doubled to make large (3 tbs) cookies! Triple chocolate cookies recipe Ingredients: 1 cup all purpose flour (120 g) 1/2 cup high quality cocoa powder (55g) 1/2 teaspoon baking soda (3 g) 1/4 teaspoon fine sea salt (1.5 g) 1/2 cup salted butter - melted and cooled slightly (113 g) 1/3 cup granulated white sugar (66 g) 1/3 cup packed brown sugar (55 g) 1 large room temperature egg (approx. 50 g) 1 teaspoon vanilla extract (4.5 g) 1/2 cup semi sweet chocolate chips (75g) 1/2 cup white chocolate chips (75 g) Directions: In a medium bowl whisk flour, cocoa, baking soda and salt until combined. In the bowl of a stand mixer, or a large bowl if using a hand mixer combine both sugars and melted butter. Mix on low for 2 minutes or until well combined. Add in the egg and vanilla and continue mixing on low for another 2-3 minutes or until the mixture is airy and pale in colour. Add in the dry ingredients and mix until just combined. Lastly add in the chocolate chips and mix to combine. Cover the triple chocolate dough and chill for 1 hour. Preheat your oven to 350F/175C and line your cookie sheets with parchment paper. Using a 1.5 tablespoon cookie scoop place your chocolate cookies onto your prepared pans, ensuring that you leave a little room for spreading. Bake for 7-9 minutes. The cookies will still be soft. Allow them to cool on the pan for a few moments before moving to a wire rack to finish cooling. These decadent triple chocolate cookies are best served warm! They will keep at room temperature for up to 4 days, but I promise that they won't last that long!
