A Génoise also known as Genoese cake or Genovese cake, is a French sponge cake named after the city of Genoa and associated with French cuisine. Contains Egg and Bases for many more fluffy Cream cake. Cake Vanilla Genoise Sponge ▶Size of pan used◀ Cake Ring: 7 Inch Dia x 2 inch High ▶Recipe ◀ 125 gms Whole Eggs 200 gms Sugar 88 gms Refined flour 0.5 gms Salt 10 gms Melted butter 423 gms Total a few drops of vanilla extract ▶Method◀ Whisk the whole egg and add sugar gradually. Bring to the ribbon consistency. Add Vanilla Extract. Sieve flour and salt together and fold with batter gently. Fold melted butter with a small amount of batter and then fold with a large Batter. While Folding ensures you do not overmix, fold just enough to incorporate dry ingredients and fat. Baking Temp: 170-180 Degree C. Baking Time: approx 15-18 min ▶Useful Tip◀ Before you start, prepare the baking cake rings with silver foil or tray with Baking Parchment. Combine the eggs and sugar, while the egg is at room temperature. If the egg is cold you can use egg and sugar whisking on a double boiler to raise the temperature up to 30-35 Degree c For good result. If you are using an electric whisk, use slow speed and gradually increase the speed. Sponge in Cake ring must be rested overnight. Sheet sponge can be used immediately, as no slice is required.
