This video shows how to prepare Beiju, a kind of flatbread or pancake made of fresh cassava and naturally gluten-free. Beiju is one of the most common cassava recipes made by original Brazilian people. Similar to a Mexican tortilla Beiju it's a flatbread, frequently made with the cassava starch and the whole cassava pulp. The recipe we show here is made with the cassava pulp to use the starch and the fibres and other components of the root. It has a crumbly texture and a slightly sweet flavour. One beiju filled with bananas, jam, butter or any other filling of your preference can be very satisfying. If you prepare it, let us know. Beiju - Fresh cassava flat bread Ingredients: 500g fresh cassava, peeled and cut into pieces 1 cup water Salt to season Tools: Knife and cutting board Blender Sieve or strainer Bowl Cheesecloth or something similar Heavy bottom skillet Preparation: Peel, remove the core string and the cassava in pieces that fit a blender jug. Add the pieces to the blender, add the water and cover with the lid. To make the pulp, start by using the pulse button. If you find it challenging to go through, remove the jug, give it a shake. Pulse again until it starts to break up easily. Blend it at medium speed until it reaches a soupy texture. Place the strainer in a bowl, cover with a cloth and pour the cassava pulp inside it. Get the ends of the cloth together and twist it until you have all the liquid out of the pulp. Crumble the dry pulp and sieve it to obtain a coarse kind of flour, and season with a pinch of salt. Add an even layer of the coarse cassava flour to a skillet and take it to medium heat. When you notice a change of colour and the edges starting to release from the pan, it's time to turn. After that, it will be ready in a bit. Serve warm to enjoy it in the best texture.
