Callos ( beef tripe stew ) is a stew common across Spain, and is considered traditional to Madrid. In Madrid, it is referred to as callos a la Madrileña. It contains Beef tripe and chickpeas, blood sausage and bell peppers. Chorizo sausage may also be used. Preparing beef tripes stew is simple. However, it takes some time to get the innards tender. Since i want to cook it the traditional way, i did not use a pressure cooker.
