Unfortunately I couldn't find any videos that really explained how the technique worked so I ended up spending hours experimenting until I was able to figure it out. This video is an attempt to help anyone else out there who wants to make Trofie and doesn't want to spend hours experimenting. Trofie is a hand rolled spiral pasta from Liguria. It looks similar to hand made fusilli or other spiral pasta but it doesn't use any tools to roll the pasta into a spiral. Instead each pasta is rolled by hand. Dough Recipe for 2 people: 120g warm water 230-250g semolina I started by adding just 200g of semolina and then added more until it felt right. This way it was easy to get the dough to come together and make it the right consistency because it's much easier to add semolina than it is to add water.
