Nopales Tacos

This recipe is so flavorful and introduces cactus! Today we teach you how to handle and prepare a cactus paddle! Ingredients: 2 Cactus paddles 4 Large tomatoes diced ½ a large white or yellow onion 1 bunch cilantro finely chopped 1-2 jalapenos diced (take seeds out if sensitive to spice) 1 lime or lemon juiced 1 tsp. Oregano 1 tsp salt plus more for taste 1 tablespoon olive oil ½ cup water for boiling the nopales Instructions: Stem/deprickle and dice the cactus paddles then dice it into small pieces. Place into a pan with boiling water and cook for around 8 minutes. Once cooked place into a strainer and rinse off to help with the sliminess of the cactus. Place in a bowl and set aside. Dice the tomatoes, onion, cilantro, and jalepeno and toss into the same bowl as the cactus. Mix well and add in the lime/lemon, salt, olive oil, and oregano. I like to serve this on a corn tortilla with refried beans, shredded cabbage, guacamole, and pickled radishes. Enjoy!!
