Air Fryer Crispy Samosas – Gluten Free Ingredients: Rice Papers 2 potatoes, peeled, washed, and chopped 2 small carrots, peeled, washed, and chopped ½ small onion, chopped Cilantro – fresh or in a paste form ¼ cup peas 1 tbsp cumin 1 tsp turmeric Salt & Black pepper to taste 1 tbsp oil – to brush samosas in air fryer 1 tsp to cook cumin Curry dip Recipe Mix ¼ cup vegan mayonnaise with 1 tbsp of curry powder. In a frying pan, over medium/high heat, add some oil or water. Add cumin seeds and let cook for 1 minute, then add potatoes, carrots, onions, coriander, turmeric, salt, pepper. Sauté for about 5-7 minutes to soften the veggies. Once potatoes and carrots are el dente (almost fully cooked), add peas into the pan, and cook for another minute. Remove from the heat, and add to a bowl and stir to cool down for a few minutes. Thoroughly wet 2 rice paper sheets and stack them. Add 1 and a half tablespoons of the mixture on a corner of the rice paper. Fold over the rice paper, then fold the triangle over 2 more times and tuck in opening and fold it over. Brush with oil. Add to air fryer tray. Don’t overcrowd the air fryer and don’t let them touch. This recipe made 10 samosas, but my air fryer only fit 4 at a time. Air Fry at 390F for 7-9 minutes or until crispy to your liking. Serve alone or with curry dip. Enjoy! Original recipe inspiration came from: Vijaya Selvaraju.
