Welcome to Cure Via Nature Care! In this video, I am going to tell you how to make Ambali, a fermented porridge with numerous health benefits. Ambali is rich in Vitamin B12, making it an excellent food for people with Vitamin B12 deficiency, especially vegetarians who typically lack access to this essential nutrient. This vegetarian dish allows those with Vitamin B12 deficiency to benefit without consuming non-vegetarian foods. Additionally, Ambali promotes the proliferation of good bacteria in our colon, enhancing digestive power and helping to cure various diseases. To make Ambali, you should use one of the five small millets: Little millet, Kodo millet, Foxtail millet, Barnyard millet, or Browntop millet. These millets are thermogenic neutral, meaning they neither increase nor decrease body heat, making Ambali suitable for everyone. To prepare Ambali, take any one type of small millet and place it in a bowl. Pour six to ten times the amount of water into the bowl and soak the millet for six to eight hours. After soaking, heat the millet in an oven for a short time, then cover it with a white cotton cloth. Leave the millet to ferment overnight. By morning, it will have a slightly sour taste, indicating it has turned into Ambali. This Ambali can be consumed in the morning, afternoon, and night, either ground into porridge or eaten as rice without grinding. Regular consumption of Ambali not only supports overall health but also helps in treating chronic ailments.
