This simple and easy-to-make recipe will assist you while preparing yours. I have enjoyed preparing these Potato balls with my mother but, one great thing was eating them together. Also, here is the recipe attached. ******************************************************* Stuffed Potatoes 2 pounds of ground beef 5 potatoes ( mashed) ½ cup of Olives and capers ½ Red Onion ½ bell Pepper 1 Cup of white flour 3 Eggs ½ cup of tomato sauce 3 cups of vegetable oil In a heated pan add ½ spoon of brown sugar, and let it caramelize. Then add the meat to the pan. After 10 minutes add some tomato sauce( tomato will keep the meat from making clumps. Add the red onion, peppers, olives, and capers and stir and cook together. Cook on medium heat for about 10 more minutes and move to the side to cool off. Start making balls with the mashed potatoes and place them on a plate. Take the balls of potatoes and make a hole in the middle, filling the inside with the cooked meat. Roll the balls through the flour and the eggs and place them on a separate plate or place directly inside a Frying Pan with hot oil. Fry the potatoes until they have turned brown and place them on top of a paper towel to soak all the grease. Enjoy.. *********************************************************** Papas Rellenas 2 libras de carne molida 5 papas (puré) ½ taza de Aceitunas y alcaparras ½ Cebolla ½ Pimiento morrón 1 Taza de harina blanca 3 Huevos ½ taza de salsa de tomate 3 tazas de aceite vegetal En un sartén caliente agregue ½ cucharada de azúcar morena , y dejar que se caramelice. Luego agregue la carne a la sartén. Después de 10 minutos agregue un poco de salsa de tomate (el tomate evitará que la carne forme grumos. Agregue la cebolla, los pimientos, las aceitunas y las alcaparras y revuelva y cocine juntos. Cocine a fuego medio durante unos 10 minutos más y mueva a un lado para que se enfríe. Empezar a hacer bolitas con el puré y colocarlas en un plato, tomar las bolitas de patata y hacer un hueco en el medio, llenando por dentro con la carne cocida, pasar las bolitas por la harina y los huevos y colocarlas en un plato aparte o colocar directamente dentro de una Sartén con aceite caliente, freír las papas hasta que se doren y colocarlas encima de una toalla de papel para que se empapen de toda la grasa, a disfrutar..
