Today I'm trying out Claire Saffitz's "foundational recipe" for Graham Cracker Crust from her Dessert Person cookbook. Graham cracker crusts are used in many different applications, so it's a good versatile recipe to have in your back pocket. While the recipes don't vary too much across the multitude of variations, this recipe includes a secret ingredient: egg yolk! Plus Claire's technique for filling the pie plate or springform pan yields an even distribution of crumbs for a uniform crust -- the thing I've always struggled with!
