In today’s video, I have a delicious fall recipe for you! 📥 SUBSCRIBE TO BUBBA’S COOKING: shorturl.at/dGZ46 CONNECT WITH BUBBA’S COOKING Web: www.bubbascooking.com Facebook: www.facebook.com/bubbascooking Instagram: www.instagram.com/bubbascookingPinterest: www.pinterest.com/bubbascooking Newsletter: www.bubbascooking.com/newsletter 📩 For business inquiries/sponsorship: eddie@bubbascooking.com ==================== Recipe: Butternut-Squash Apple Burger Ingredients (instruction at the bottom) 2 cups cooked wild rice blend 1 1/2 cup diced butternut squash (medium diced) Three tablespoons of onion powder 1 Tablespoon of garlic powder 1 Cup granny smith apples (medium diced) One teaspoon of salt and pepper 1 Tablespoon of fresh thyme 2 Tablespoons unsalted pumpkin seeds Caramelized onion Aioli (instruction at the bottom) 1 cup of Mayo One pod of roasted garlic(head of garlic) dash of cayenne pepper Salt and pepper to taste One teaspoon of honey or maple syrup 1/4 cup of caramelized garlic Caramelized Onions (instructions at the bottom) Four tablespoons of butter Four large yellow onions 1/4 cup of wine(white or red) or stock(veggie, chicken, or beef) salt to taste Caramelized Onions Instructions Thinly slice the onions. Melt 4 Tablespoons unsalted butter or other oils(olive oil, avocado oil) in a large skillet over medium heat. Add onions to the skillet and stir them gently to coat with the fat. I am checking the onions every 5 minutes. Stir the onions and scrape up any fond forms on the bottom of the skillet with a wooden spoon. Keep in mind that the more onions you add, the more cooking time added for results. After onions become translucent, turn the temp down to medium-low heat. check on them every 5 minutes and stir Around 40-50 minutes, Onions should be golden and starting to smell very caramelized. Taste one; if you like the way it tastes, you can stop, but if you want it deeper in caramelized flavor, continue cooking a little longer. Once onions have finished to your likings, deglaze your pan with 1/4 cup of stock or wine. As liquid bubbles, scrape up the fond and stir it into the onions. Add salt to taste. Caramelized Onion Aioli turn on oven 425 get garlic pod and cut a little off the top. Place the garlic pod in aluminum foil and drizzle oil on top and close the aluminum foil tight so no steam will escape. Roast for 40 minutes in the oven. After the garlic has finished cooking, let the pod cool down before handling it. Remove the skin from the garlic. Place all of the ingredients into a blender, blend until well incorporated. Taste if you need more salt, pepper, or cayenne; add it. Butternut Squash Apple burger pattie Instructions Preheat oven to 400F Place diced squash on a parchment-lined cookie sheet, sprinkle on salt and pepper, drizzle a little oil on top, and bake for 15 minutes. At the 15 minute mark, add the apples to the cookie sheet and sprinkle salt and pepper and drizzle a little oil on top—Bake for 30 more minutes. Set aside to cool. Put the Apple, butternut squash, wild rice, pumpkin seed, thyme, and seasoning in a large bowl and mash the ingredients with a potato masher(or use food processer) and mash or blend into smaller chunks. Do not over mash or blend. It will help if you form the pattie without looking like a paste. Shape into four patties, then cook in a skillet over medium heat for about 5-7 minutes on each side or until browned. Place a lid on top of the skillet to help the burger warm-up though out. Keep in mind if your mixture is on the wetter side, do not cover the skillet. Turn off the heat and place Muenster cheese (monster because of Halloween season) on top and cover with a lid until melted. Enjoy I used pretzel buns. Caramelized onion aioli. Caramelized onions.
