Nalen gur or khejurer patali gur is a seasonal ingredient that you would find only during the winter months and it is used to prepare a wide variety of bengali sweet dishes. Since Sankranti would be the pithe payesh day with Nolen gur as the star ingredient, today, I will share with you the recipe of nalen gurer payesh which is easy to prepare but offers a unique taste. Ingredients: • Milk: 1&1/2 litres • Gobindo bhog rice / bashmati rice: ½ cup • Patali gur: 300 gms • Bay leaf: 1 • Cashew: 0 – 12 • Rasins: 1/3 cup • Ghee: ½ tsp How to prepare: • I have taken here 1 and ½ litres of full cream milk. The fat in the milk adds creaminess to the kheer and the starch in the newly harvested rice helps to thicken the milk. • I will now soak the rasins, here I have taken about 1/3 cup of it and add water to it . • The milk is boiling and I will reduce the flame and thicken it a bit. It will take about 15 to 20 mins to do this Keep stirring regularly so that the milk does not catch the bottom of the pan • In the mean time, I have about one third cup of rasins which I will soak in some water to swell • Take ½ cup rice for 1 and ½ litres of milk, remember to maintian the ratio as this is very important. Wash it and keep aside. In case you don’t find gobindobhog rice, you can replace it with bashmati rice but yes you have to soak it for a longer time. • I have taken about 300 gms of gur to prepare this payesh. • My rice is completely cooked and its time to add the gur. I have broken the gur into smaller pieces so that it dissolves in the milk easily. • But before adding please make sure that the rice is completely cooked as we will not cook further after adding the gur as it might curdle the milk. • Add the gur and give a quick mix and switch off the gas. The gur will melt in the heat automatically. • Add 1.2 tsp of ghee in a pan and add some chopped cashews and fry for some time then add the soaked rasins and fry, now add them in the payesh and mix , • Your Nolen gurer payesh is ready to serve.
