We wait so long for our garlic to grow, we want to make sure we’re harvesting at just the right time in order to have a successfully cured harvest that will store for the longest possible time. Garlic can take anywhere from 7 to 9 months to fully mature, depending on the variety. Another variable affecting this is weather. We’ve been growing garlic for 10 years in the same growing zone, and the timing is a little different every year. So, the calendar isn’t the only thing we can count on to know the right harvest time. We rely on visual cues from the garlic plants themselves that let us know when it’s time to harvest. We’ll show you all of the cues we look for as we harvest our softneck garlic - organic Inchelium Red and Sicilian. We’ll also show you how we harvest, how we cure our garlic, and at the end of the video, we’ll show you how we know when curing is complete.
