I believe the $1299 is the best option and upgrade it from there. The only two reasons for upgrading to the higher model are the colors and built-in USB-C ports. The difference between the 7 GPU version and the 8 GPU version is not something to stress over and probably will not impact most people's daily tasks. The Mac Mini is also another great value Mac, but it's not an All-In-One PC which is a completely different category than the iMac. Some consumers want the premium of not having to deal with spending extra money and deciding which accessories to replicate the iMac. The value for the iMac is positioned quite well now with the M1 processor inside. Aesthetics are also another factor and the Mac Mini is more of a minimalist design whereas the 2021 iMac with its redesign is more of decor or an iconic piece in a setup.
