The Meatloaf That Made Me Love Again Best Homemade Meatloaf Recipe with Creamy Mashed Potatoes & Fresh Baked Bread | Easy Recipes Meatloaf Ingredients: 1 ½ lbs. ground beef (or mix of beef & pork) ½ cup breadcrumbs 1 small onion, finely chopped 2 cloves garlic, minced 1 egg ½ cup milk 2 tbsp Worcestershire sauce ¼ cup ketchu 1 tbsp mustard 1 tsp salt ½ tsp black pepper ½ tsp paprika ½ tsp dried oregano Meatloaf Glaze: ½ cup ketchup 2 tbsp brown sugar 1 tbsp apple cider vinegar Mashed Potatoes Ingredients: 4 large russet potatoes, peeled & cubed ½ cup heavy cream (or milk) 4 tbsp butter 1 tsp salt ½ tsp black pepper ½ tsp garlic powder (optional) Fresh Baked Bread Ingredients: 3 cups all-purpose flour 1 packet (2 ¼ tsp) active dry yeast 1 ¼ cups warm water 1 tbsp sugar 1 tsp salt 1 tbsp olive oil Instructions: Making the Meatloaf: Preheat oven to 375°F (190°C). In a large bowl, mix the ground meat, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, ketchup, mustard, and seasonings until combined. Shape into a loaf and place in a greased baking dish. In a small bowl, mix the glaze ingredients and spread over the meatloaf. Bake for 50-60 minutes or until fully cooked (internal temp 160°F/70°C). Let rest for 10 minutes before slicing. Making Mashed Potatoes: Boil potatoes in salted water for 15-20 minutes until fork tender. Drain and mash with butter, cream, salt, pepper, and garlic powder. Mix until smooth and creamy. Baking Fresh Bread: In a bowl, dissolve sugar and yeast in warm water. Let sit for 5 minutes until foamy. Add salt and olive oil, then mix in flour gradually. Knead for 8-10 minutes until smooth. Cover and let rise for 1 hour. Punch down, shape into a loaf, and place in a greased baking pan. Let rise for another 30 minutes. Preheat oven to 375°F (190°C).
