Hi guys! If you like crispy Pork/Chicken & coconut, you will LOVE this recipe! Originally this recipe required deep fried, but you know me. am quite aware of what I eat so I will show you the healthiest way out to make this dis successfully without feeling any guilt. You can use also chicken if you do not eat pork. The pork are first marinated and then quickly flash fried to seal in all the flavour, I baked them in the oven instead of deep frying the meat. The baking powder and corn flour will draw out water from the meat therefore result in crispy texture. The cooking is then finished by lightly braising in coconut milk, you can also use coconut juice if you prefer that. By doing this, it will add a wonderful natural sweetness to this dish. Serve as part of a shared meal. Ingredients • 2 tbsp minced garlic • 2 tbsp fish sauce • 1 tsp oyster sauce • 2 tbsp sugar • 1 tsp salt • 1 tsp freshly ground black pepper • 300 g - 400 g pork/chicken thigh , cut into smaller thin pieces • vegetable oil, for deep frying • 200 ml coconut milk + 1 tbsp. fish sauce + 1 tbsp. brown sugar (Optional) • 1onion, sliced into segments • 2coriander (cilantro) sprigs or basil & thai chilli Instructions Marinating the meat for 20 - 30 minutes before you coat it with the flour mixture. In a mixing bowl, combine 1 tablespoon of the garlic, fish sauce, oyster sauce, sugar, salt and pepper. Mix well, then add the pork and stir to coat well. Set aside to marinate for 20 - 30 minutes. Mix the corn flour and baking powder together and dust it over the marinated meat. Line in on a baking try and bake for 190 degree c for 25 min on each side. Remove the pork and drain on kitchen paper. Put the coconut milk in a saucepan and bring to the boil. Season with fish sauce and brown sugar (Optional) Add the pork and simmer for 2-3 minutes, add the onion then turn off the heat. Transfer the dish to a serving platter and garnish. Serve with steamed jasmine rice.
