This healthy, spiralized version of fried rice using spiralized sweet potatoes that have been pulsed into rice-like bits instead of, well, “regular rice. There’s something about the sweetness and texture of the sweet potatoes that make this highly nutritious version of fried rice a hit. I make it all the time in the winter – it saves well for work lunches and is totally customizable. Top it with shrimp, chicken, pork, or amp up the protein the vegan way, with edamame or tofu.
