TURKMEN PALOW | TURKMEN RICE DISH

Ingredients: 1⁄2 lb beef cubes 1 medium onion, sliced 3 cups rice, rinsed 4-5 carrots, cut into thick sticks Directions: Vegetable oil 1 whole garlic head, rinsed Salt In a large pot, brown the meat in vegetable oil over the medium-high heat. Add onions, give it a stir, and cook for couple minutes. Add carrots, stir again and add the whole garlic. Place the rice in a large bowl and rinse in several changes of water until the water runs clear. You do this to wash off extra starch and to keep the grains from sticking together. Drain well. Add the rice to the pot, and then add water. Liquid should cover the rice by about a half inch. Bring to a boil (do not stir at this point), then reduce heat to low. Cover the pot tightly and simmer for 10 to 15 minutes. Open the lid and very carefully with a flat spatula flip the top layer of rice. This is done to make sure that all the rice is cooked even. Then cover again and let it cook for another 15 minutes.
