Butter Chicken with YFL - • Butter Chicken with Chef Sanjyot (YFL... *********************** CHICKEN CURRY Preparation time 10 minutes Cooking time 25-30 minutes Serve 3-4 Ingredients For Ginger Green Chili Paste 2 inch Ginger (peeled & roughly chopped) अदरक 4-5 no. Green chillies (less spicy & roughly chopped) हरी मिर्च 1 tsp Cumin seeds, जीरा For Chicken Curry ⅓ cup Mustard oil, सरसों का तेल 2 no. Black cardamom, बड़ी इलायची 1 no. Bay leaf, तेज़ पत्ता Prepared Ginger green chili paste, अदरक और हरी मिर्च का पेस्ट 4 large Onions, chopped, प्याज Prepared Curd mixture, तैयार किया हुआ दही का मिश्रण Little water, पानी Marinated chicken, मैरीनेटेड चिकन 1 ½ cups Water, पानी Salt to taste, नमक स्वादअनुसार 2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता For Curd Mixture 1 ½ cups Curd, beaten, दही 2 tsp Turmeric powder, हल्दी पाउडर 2 heaped tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर 2 tbsp Coriander powder, धनिया पाउडर 1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट For Chicken Marination 1 kg Chicken (thighs & drumsticks) चिकन ½ tbsp Black peppercorns, crushed, कुटी हुई काली मिर्च 1-2 tsp Lemon juice, नींबू का रस Salt to taste, नमक स्वादअनुसार ½ tsp Turmeric powder, हल्दी पाउडर For Raita 1 medium Cucumber (peeled & roughly chopped) खीरा 1 large Tomato, chopped, टमाटर 1 large Onion, chopped, प्याज 1 ⅓ cups Curd, beaten, दही Salt to taste, नमक स्वादअनुसार 1 tsp Lemon juice, नींबू का रस 1 tsp Roasted cumin powder, भुना जीरा पाउडर 1 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता ¼ tsp Degi red chili powder, धनिया पत्ता For Chai 2 cups Water, पानी 2-3 tsp Tea leaves, चायपत्ती 3-4 tsp Sugar, चीनी ½ inch Ginger (peeled & crushed) अदरक 1 cup Milk, दूध For Garnish Coriander sprig, धनिया पत्ता Process For Ginger Green Chili Paste ● In a mortar pestle, add ginger, green chillies, cumin seeds and grind it into coarse paste. ● Keep it aside for further use. For Chicken Curry ● In a handi, add mustard oil, once it's hot, add black cardamom, bay leaf, prepared ginger green chilli paste and saute it for a minute. ● Add onions and cook it for a while until golden in colour. ● Add curd mixture and let it cook for 7-8 minutes on medium flames. ● Add a little water, marinated chicken, cover it with the lid and cook it for a while. ● Add water, salt to taste and simmer it for 5-6 minutes until it thickens. ● Turn off the flames and finish it with coriander leaves. ● Transfer it to a serving dish and garnish it with coriander sprig. ● Serve hot with roti, steam rice and prepared raita. For Curd Mixture ● In a bowl, add curd, turmeric powder, degi red chili powder, coriander powder, ginger garlic paste and give it a good mix. ● Keep it aside for further use. For Chicken Marination ● In a bowl, add chicken, crushed black peppercorns, lemon juice, salt to taste, turmeric powder and mix it well. ● Keep it aside to marinate for a while. For Raita ● In a bowl, add curd, cucumber, tomato, onions, salt to taste, lemon juice, roasted cumin powder, coriander leaves, degi red chili powder and mix it well. ● Transfer it to a serving bowl and garnish it with coriander sprig.
