Chocolate Rum Cupcakes with Candied Bacon Ingredients: 1 oz dark chocolate 6 tbsp unsalted butter ⅓ cup Dutch processed cocoa powder ½ cup granulated sugar ¼ cup brown sugar 2 eggs ¼ cup rum ¼ cup milk 2 tsp vanilla extract ¾ cup flour (I used gluten-free) 1 tsp baking powder ¼ tsp baking soda Pinch of salt For the Chocolate Icing: ½ cup heavy cream 1 tbsp Dutch processed cocoa powder 2 tbsp granulated sugar ¼ tsp vanilla extract For the Candied Bacon: 2 strips bacon 2 tbsp brown sugar Directions: Preheat the oven to 350 F Using a double boiler or microwave, melt the chocolate and butter together Ad in the sugar and cocoa powder, then mix Add in the eggs, rum, milk, and vanilla extract, then combine Add in the flour, baking powder, baking soda, and salt, then mix to form a thick batter Pour the batter into a lined cupcake tin (makes 9 cupcakes) and bake for 20-25 minutes, until a toothpick inserted into the center comes out clean While that is baking, make the icing by combining the heavy cream, cocoa powder, sugar, and vanilla extract with an electric mixer For the candied bacon, place the strips of bacon flat on a nonstick pan and sprinkle the brown sugar evenly on top Cook on medium heat until brown and caramelized, flipping the bacon over, halfway through To assemble: cupcake, icing, then bacon on top Enjoy!! #cupcakes #chocolatebacon #weirdfood #trendingfoods
