✨Ingredients: 5 large tortillas sheets 1 tbsp oil (to prepare the stuffing) 1 tsp cumin seeds 1/2 red onion, finely chopped 4 cloves of garlic, finely chopped 1 cup mixed bell peppers (red, yellow, orange & green) finely chopped 1/2 cup sweet corn 1 cup black beans (precooked, washed and dried) Salt to taste 1 tsp chilli flakes 1 tsp tajine seasoning 1 tsp Italian seasoning 1/2 cup grated paneer (you may also use tofu) Handful of finely chopped coriander leaves Corn flour slurry (2 tsp of corn flour mixed well in 2 tsp water) 2 tbsp oil for pan frying the taquitos 🌿Garnish: Some finely chopped peppers Handful of Finely chopped coriander leaves 👉 Method: To prepare the stuffing, add oil to a pan, once heated add the cumin seeds and onions and cook for two mins until slightly pink in colour. Then add the garlic and saute for another two minutes until fragrant. Add the chopped bell peppers and cook for another minute or two until slightly tender. Add salt, chilli flakes, tajine seasoning and Italian seasoning and mix well to combine. Now add the sweet corn and black beans and cooking everything on medium high for another two minutes. Now using a potato masher gently mash the beans, this will help in binding everything together. Add the grated paneer and finely chopped coriander leaves, one last toss and the filling is ready. Now lay out one of the tortilla sheets on a clean flat surface and then using a round cookie cutter cut the sheet into rounds as shown in the video. Place a heaping tablespoon of the prepared mixture in the center of the tortilla. Spread some cornflour slurry on one side to seal the edges, roll the tortilla up tightly, press it gently to seal and place it seem side down on a plate. Continue rolling the Taquitos exactly as shown in the video until the mixture is done. ✨this recipe will give you a total of 15 Taquitos✨ Once they are all rolled, pour some oil on to a non stick pan. Once heated arrange the prepared Taquitos and cook them for a minute or two on each side until slightly golden in colour. Transfer to a serving plate. Garnish with some finely chopped pepper and coriander and serve it alongside salsa, sour cream or a spicy and tangy avocado dip and enjoy!
