This analysis of pork’s performance within retail and foodservice gives the evidence behind why pork demand is struggling. There were 3 key results: Pork is seen as less tasty than beef and lamb and harder to cook than beef or chicken. Despite being one of the cheaper proteins in supermarkets, retail prices have risen faster than some of the other proteins and in particular chicken where the price gap has widened. Pork has seen growth in the foodservice market but because over 86% of pork volumes are through retail, overall demand is in decline.
