Here's how to make it happen: ✸VEGAN CHILI✸ 2T + 3T olive oil 1 large yellow onion, diced 2 carrots, diced 2 ribs organic celery, diced 1 organic red bell pepper, seeded and diced 1 jalapeño (optional) 4 cloves garlic, chopped 3 T chili powder 1 t cumin 1/2 t chipotle (or more for spicier ;) 1 medium yam, diced 3 c diced butternut squash 1/2 c beer 28oz can of diced Italian / organic tomatoes 1 15oz can chickpeas 1 15oz can black beans 1 box organic spinach In a large pot, saute onions, carrots, celery, and peppers over medium high heat until browned. (about 10 minutes). Stir in spices and garlic and cook for a minute. Add the sweet potato and squash. Add beer and stir well. Cook over medium heat for about 10 minutes, until potato is softening. Stir in beans and tomatoes, bring to a boil, stir, reduce heat to medium low and cook for 45 min- 1 hour. Stir in remaining olive oil and spinach and cook another 2-5 minutes. Garnish with ~whatever~ — avo, sour cream, lime wedges, minced red onion. Some people like cilantro… but Karlie doesn’t! ✸ROASTED CARROT HUMMUS✸ Start Here: 1lb carrots, washed 1 T olive oil 1 t cumin Hefty pinch of salt Remaining Ingredients: 2 T tahini 1 small clove garlic Juice of 1/2 lemon 2 T olive oil Hefty pinch of salt 1/4 c water cayenne is optional Roughly chop carrots, toss with olive oil, cumin, and salt. Roast at 400 for 25-40 minutes, until fork tender and slightly browned. Set aside to cool. Whiz (blend, process) together carrots with remaining ingredients in a food processor. Cover and refrigerate for up to a week! Makes a makes about a cup and a half of hummus.. If you’re having more than 6 people over I’d double it! THANK YOU LENA!
