The whole family will be back for seconds and it’s definitely good enough for company. #easy #rotisseriechicken #pastasalad #broccoli #bacon CREAMY BACON BROCCOLI PASTA SALAD 16 ounce package rotini pasta – cooked as per package direction 1 pound of fresh broccoli, chopped – stems removed 1 small diced red onion ½ pound of bacon, cooked until crisp and crumbled(or more to taste) 2 cups mayonnaise ½ cup red wine vinegar ½ cup sugar Salt and freshly ground black pepper to taste Cook the pasta, drain and rinse in cold water to stop the cooking process Chop the broccoli and onion. Crumble the bacon and set aside In a separate bowl, mix together the mayonnaise, red wine vinegar, sugar, salt and pepper until smooth and creamy Once pasta has drained well, put it in a large bowl. Add the broccoli and onion. Mix well. Pour the mayonnaise mixture over the pasta mixture. Gently mix to combine. Cover the bowl and chill at least 3 hours. Just before serving, add the crumbled bacon and stir to mix. This way the bacon will be crunchy when you are ready to eat. Enjoy! Recipe inspired by The Country Cook
