Recipes - We don't measure much in our home cooking but here's a guide for what we made to help you: Quinoa salad: Soak about 2-3 cups quinoa overnight, the morning of drain and rinse Add to a pot, season with paprika, onion powder, a dash of cumin, Italian seasonings and salt, then add just enough water to cover quinoa bring up to a boil. Turn down to simmer and simmer for about 10 mins. Turn off fire and let sit in pot to steam for about 15-20 mins or until cool. In a bowl add chopped bell peppers, red onion, cilantro. Make dressing: In a measuring cup, add juice of 1 lime and half lemon, 2-3 garlic cloves, olive oil or any oil you like, salt. Shake it up and dress your salad. Pasta Salad Cook pasta of choice Blend parsley, olive oil, salt and garlic in a blender until a smooth consistency Add a bag of broccoli slaw, 2 tbsp mustard (or more), salt, pepper, pour over parsley oil, optional add juice of a lemon, toss to coat and enjoy! Overnight oats 3 cups rolled oats, 2 to 3 tbsp chia seeds, 1/4 cup almond butter or peanut butter, 1/2 cup of agave, coconut sugar or honey, nuts and seeds (optional), 1 can of coconut milk + 1/2 can water Or about 2 - 3 cups hemp milk. Adjust liquid levels to cover oats about an inch over the top of oats. Cover and refrigerate over night and enjoy. Sweet potato chickpea curry casserole Chop 1 onion, 2 sweet potatoes and add to a casserole dish with 1-2 cups chickpeas (cooked) Season with salt, cumin, coriander, garam masala, 1 can diced tomatoes, 1/2 cup coconut milk (optional) mix and roast in oven at 450 F for about 30-45 mins. Check water levels, you want to make sure the liquid covers veggies or it will burn. 💚Links to ingredients to make your life easy!
