In many people, consumption of dietary cholesterol does not equal elevated cholesterol levels in the blood. Most people don’t absorb much of the cholesterol they eat, although we all absorb some. To the extent people do absorb dietary cholesterol, they tend to make less of it. In this way, the body keeps cholesterol levels tightly regulated. This study from the American Journal of Clinical Nutrition is illustrative. However, some of us carry mutations in genetic pathways that cause a much greater percentage of the cholesterol and plant sterols we eat to be absorbed into the blood. Known as "hyper-absorbers," these people may want to limit dietary cholesterol, as well as plant fats, like avocado and nut butters.
