This is a delicious pasta dish with sundried tomatoes, basil, a creamy Parmesan sauce and tender grilled chicken. Sundried Tomato and Parmesan Pasta with Chicken by How Jen Does It 4 boneless, skinless chicken breasts, leave whole if grilling or cut into bite sized pieces if using skillet Whisk together the following ingredients and pour over chicken: 2 Tablespoons olive oil 2 Tablespoons balsamic vinegar 2 cloves garlic, minced 1 teaspoon dried basil Salt and pepper Marinate chicken in refrigerator for several hours. 2 ½ cups brown rice quinoa pasta ½ cup chopped sundried tomatoes 4 cloves garlic 2 Tablespoons olive oil 2 Tablespoons butter 1 cup chicken or vegetable broth ½ cup half & half 1/4 cup fresh basil or 1 1/2 teaspoons dry basil 1/3 cup grated Parmesan cheese Grill or cook chicken in skillet. Cook pasta according to package. Cut chicken into bite size pieces. In a large skillet over medium high heat, saute garlic and sundried tomatoes in olive oil. Slowly mix in remaining ingredients.
