Blueberry French Toast Casserole Ingredients: • 1 cup blueberries, divided (½ and ½) • 1 brick cream cheese, softened • ½ cup powdered sugar • 1 tbsp vanilla extract, divided (½ and ½) • 1 tbsp milk • 1 loaf brioche bread, cubed • ½ tsp cinnamon • 1 cup milk • 4 large eggs • ¼ tsp nutmeg Directions: 1. In a bowl using a hand mixer, mixed together the cream cheese, powdered sugar, 1 tbsp milk, ½ tbsp vanilla until the mixture is smooth and creamy. 2. Gently fold ½ cup of blueberries. 3. Layer the bottom of a 10x14 inch baking dish with bread cubes. 4. Spread the cream cheese mixture over this layer of bread cubes. 5. Once the mixture is evenly spread, top with the remaining bread cubes to form the second layer. 6. In another large bowl, whisk together 1 cup of milk, eggs, vanilla extract, cinnamon, and nutmeg until fully combined. 7. Pour the mixture over the layered bread in the baking dish, ensuring all the bread is soaked. 8. Sprinkle the rest of blueberries evenly on top 9. Cover the dish tightly with aluminum foil and refrigerate for 5 hours or overnight. 10. Preheat your oven to 375F. 11. Bake the dish for 45 minutes, remove the foil and continue baking for about 10-15 minutes or until the top is lightly browned.
