In this video I show you how to make one of my all time favorite cold weather dishes, french onion soup. Delicious sweet caramelized onions in a seasoned beef stock, topped with buttered French baguette bread and covered in cheese. This recipe is super easy to make and a perfect choice on those cold days. Shopping List: 1 tbsp oil 2 tbsp butter Thin pats of butter for the bread 5-6 large onions, finely sliced salt and pepper to taste 1 tsp sugar 2 tbsp flour 2/3 cup red wine, or apple cider vinegar 4-6 cups beef broth 1/2 tsp dried thyme or two sprigs of fresh thyme French baguette or croutons Fresh cheddar cheese, grated (don't use pre-shredded. It tends to not melt right) Finely chopped parsley for garnish In a large Dutch oven or sauce pot heat oil and butter over medium heat. Add onions and stir until they are well coated with the oil/butter. Cover and cook onions for 15 minutes. Remove the lid and season the onions with ksoher salt, pepper and sugar. Cook the onions uncovered for an additional 30 minutes, stirring about every 5 minutes. Onions should be deep golden brown when ready. Once onions are caramelized stir in flour and cook for 1 minute to cook out the flour taste. De-glaze the pan with the red wine. Stir around until all the liquid has reduced by 50% and all the alcohol has cooked out. About 5 minutes. Be sure to scrape the bottom of the pan to pick up all that great flavor. Add broth and the dried thyme then bring the mixture to a boil. Reduce heat to medium-low and simmer for 30 more minutes. Ladle soup into individual, oven-safe bowls and top with the bread, pats of butter and cheese. Bake at 375°F until cheese is melted and bubbly. Serve hot from the oven. Garnish with parsley. Enjoy!
