Lemon Cookie Pudding - Subscriber Sunday #58 -A Light and Refreshing Dessert for the Spring & Summer

Lemon Cookie Pudding 1 box (3.4 ounce) instant lemon pudding 1 can (14 ounce) sweetened condensed milk 1 1/2 cups water 1 pint (16 ounces) heavy whipping cream 1/2 box lemon sandwich cookies, divided 8 ounce tub Cool Whip Whisk together the lemon pudding packet with the sweetened condensed milk and water. Once thoroughly mixed put in the refrigerator until the heavy whipping cream is whipped. Whip the heavy cream until very thick. Fold the pudding mixture and the heavy whipping cream together thoroughly. Crush about one sleeve of the cookies and mix them into the pudding and heavy cream mixture. Spread into the bottom of a 9 x 13” dish. Spread the tub of Cool Whip on top of the pudding/cookies. Finely crunch up a few of the remaining cookies and sprinkle on top to decorate.
