I didn't use coconut oil, but I did add a few extra tablespoons of water to get it into a super smooth consistency (about 6-7 TBL of water total). I also used 1 tsp. garlic powder instead of fresh garlic and didn't use thyme in the cheese, only for decoration. Butternut squash soup based on this recipe: https://simple-veganista.com/butternu... I didn't use oil to sauté and I didn't use sage. Instead I added 1 TBL of minced ginger and subbed 1/2 cup of the broth for soy milk (or you can use any creamy unsweetened plant milk you have! Kale salad: https://simple-veganista.com/mediterr... Feel free to swap out the veggies for any you like or have on-hand. For the dressing I just made a simple red wine vinaigrette. Glazed tofu: https://itdoesnttastelikechicken.com/... I served this over roasted rosemary potatoes & carrots, which I just roasted at the same time as the tofu, 375F for about 35-40 minutes. Chocolate Orange pudding: https://itdoesnttastelikechicken.com/... I reduced the serving size to 4 (you can adjust this on her website directly!) and then added 1/4 cup vegan chocolate chips and about 1 tsp. orange zest. If using orange zest, start with less and taste as you go to get the right flavor.
