From the Kashmiri khazana, here's a sweet recipe prepared with rice, curd and sugar. A treat to the eyes and taste buds both! KALAMRO Ingredients 1 cup Kolam rice, soaked for 20 minutes and drained ¾ cup milk ¾ cup powdered sugar ½ tsp green cardamom powder ½ cup grated mawa/khoya 1¼ cups whisked yogurt Garnish Desiccated coconut Slivered almonds Fresh pomegranate pearls Raisins Dried rose petals Method 1. Put rice in a deep pan, add 3½ cups water and mix, cover and cook on low heat for 15-20 minutes or till the rice is completely cooked and sticky. 2. Open the lid and lightly mash the rice using the back of the spoon. Take the pan off the heat. 3. Add milk, powdered sugar, green cardamom powder and mawa and mix well. Let it cool to room temperature. 4. Add yogurt and mix, blend with an electric hand blender. Keep the mixture in the refrigerator for 1-2 hours. 5. Transfer the rice mixture into serving bowls and garnish with desiccated coconut, slivered almonds, fresh pomegranate pearls, raisins and dried rose petals. Serve immidiately.
