Easy Blueberry Crumble Bars That Taste Like Pie!

These blueberry crumble bars have a delicious layer of blueberries sandwiched between a shortbread crust and a buttery crumble topping. Crumble Ingredients: 1/4 cup of granulated sugar 1/4 tsp baking powder 3/4 cup all purpose flour pinch of salt 1 Tbsp beaten egg 1/4 cup butter, salted and cold. 1 tsp lemon zest Blueberry Mixture: 1 cup blueberries 2 Tbsp sugar 1 tsp cornstarch squeeze of lemon juice Directions: Line a 9 x 5" loaf pan with parchment paper or spray with non stick baking spray. In a bowl, combine crumble ingredients and use a fork, pastry blender or your hands to mix together until it forms a damp sand consistency. Add extra beaten egg if it seems too dry. Press half of mixture into bottom of lined loaf pan. In a small bowl combine blueberries, sugar, cornstarch and lemon juice. Pour over crust. Add remaining crumble mixture over top of berries. Bake in a 375 degree F oven for 30-40 minutes or until crumble topping is golden brown. Allow to cool and enjoy!
